CHOCOLATE CHOCOLATE CHIP COOKIES WITH A SURPRISE INGREDIENT
The last international trip we took before COVID-19 put a stop to travel, was to Reykjavik, Iceland. While there, we tried all sorts of rich and decadent foods. My favorite was the pairing of chocolate and black licorice. The combination was everywhere and could be purchased in candy stores, boutiques, gift stores, fine bakeries and restaurants.
One night after dinner, Tyler and I shared a slice of chocolate cake infused with black licorice. It was heavenly! Ever since then I’ve wanted to explore adding licorice to some of our favorite chocolate recipes. Over the Christmas holiday, I finally got my chance! Using a family favorite chocolate chocolate chip cookie recipe, I added licorice chunks and then baked as usual. Once out of the oven, I garnished the tops with dark chocolate and black licorice chunks. They were delicious!
CHOCOLATE CHOCOLATE CHIP COOKIES WITH LICORICE
1 1/2 cups granulated sugar
1/2 cup butter
2 eggs
2 teaspoon vanilla
1 3/4 cups flour
2/3 cup cocoa powder
3/4 teaspoon baking powder
1/2 teaspoon salt
2 cups dark chocolate chips (save some for garnish)
2 cups gourmet licorice, sliced in rounds, and then in half (save some for garnish)
Cream wet ingredients together, and then add dry ingredients. Once blended, stir in the chocolate chips and licorice chunks, Form rounded dough balls, and place on baking sheet with parchment paper. Bake at 350 degrees for approximately 10 minutes.
Immediately after taking out of the oven, garnish with chocolate chips and licorice chunks. Cool before serving.
